Dinner at this level is not a quick thing. A tasting menu with a paired flight runs to three or four hours, arrives in eight or ten courses, and is designed to be taken slowly. The wine is not a garnish; it is half the reason the kitchen wrote the menu that way. Country restaurants with rooms add an hour of driving at each end, usually on unlit lanes.

This is the clearest case for a chauffeur there is. Nobody at the table is nominated, nobody is watching their glass, and nobody spends the final course thinking about the car. In Mayfair, Marylebone and Chelsea there is also the small matter of parking, which at eight in the evening is a genuine problem and at eleven is a different one. Your chauffeur waits nearby and is at the door within a minute or two of your message.

For a restaurant an hour or two outside London, in the Cotswolds, Oxfordshire, Berkshire or the Kent and Sussex countryside, the return leg is the whole argument. Dark lanes after a long dinner are exactly the drive you do not want. Book the collection as a window rather than a time, because kitchens do not run to the minute and neither should you. Kerbs, waiting and the country run

Restaurant kerbs are rarely designed for cars. In Mayfair and Chelsea the front of the building is usually a residents' bay, a loading restriction or a taxi rank, and hotel dining rooms have forecourts that belong to the hotel rather than to arriving guests. Your chauffeur pulls up wherever stopping is permitted, which is generally within a few doors of the entrance, and then moves off rather than sitting on a yellow line for three hours while you eat.

Where the car actually goes during dinner matters more than it sounds. Central London offers very little legal waiting after six in the evening, so your chauffeur uses a known street or car park within a short drive and returns on your message. Give a five-minute warning as coffee arrives rather than as you stand up, and the car will be outside as you reach the pavement. Rain changes that arithmetic, and on a wet night your driver sets off earlier.

Out of town, the practicalities invert. Country restaurants sit down lanes with no lighting and no pavement, behind a postcode that resolves to the middle of a field, so we confirm the true approach beforehand rather than trusting satellite navigation at ten at night. Gravel sweeps and steep entrances suit some cars far better than others. If you are staying in the rooms above, a drop in the evening and a collection after breakfast is the sensible shape.

Entertaining over dinner works because nobody is performing. What undoes it is the logistics either side: a guest circling for parking, a host checking a phone for a car that has not moved in twenty minutes, a scramble for taxis in the rain at eleven. One arrangement that collects guests from their offices and returns each of them to their own front door removes all of that from the evening.

For firms entertaining regularly, a standing arrangement is simpler than repeated bookings. In December, when every restaurant in the West End turns three sittings a night and the streets around them are solid, the difference between a booked car and a hopeful hand in the air is the whole evening.

Sittings, seasons and notice

Most kitchens run two sittings, an early one around half past six and a later one from half past eight, and a tasting menu taken at the later sitting will finish when it finishes. Lunch is the quieter and often lovelier booking, particularly at country restaurants where the drive is worth seeing in daylight. Sunday lunches out in the counties run long and finish gently into the dusk.

Notice depends entirely on the date. An ordinary Tuesday can frequently be arranged within the same week. Valentine's night, Mother's Day, the last fortnight before Christmas and New Year's Eve are booked out for cars as thoroughly as they are for tables, so secure both together. For a distant restaurant, tell us early, because a long evening at range is a different arrangement from a short one in town.
