The market's full trading days run from midweek to Saturday, and Saturday is by some distance the busiest: Stoney Street, Bedale Street and Winchester Walk fill with people from mid-morning, and the surrounding kerbs are taken by traders' vehicles from very early. On those days we collect from Southwark Street or from the Bermondsey end of Snowsfields rather than attempting the market lanes. Earlier in the week the same streets are calm enough to reach the cathedral door.

Guy's Hospital has entrances on Great Maze Pond and St Thomas Street, both narrow and both busy with ambulances, so we set down where the hospital's own signage directs and wait around Snowsfields. Theatres at the Bridge and the Globe empty towards the river between roughly ten and half past, and the approaches to London Bridge stiffen for twenty minutes or so. A pickup a couple of streets inland is quicker than one at the door.

London traffic is predictable enough to plan around and too variable to ignore. Weekday mornings into the centre and the long crawl outward from four until seven are the two windows that reshape a schedule, and we quote timings that reflect them rather than a mapping application on a quiet Sunday. Evening runs and weekends are considerably freer, and airport legs are the ones most worth padding.

Availability in the capital is deeper than anywhere else in the country, so short-notice requests are frequently workable, even the same day. The exceptions are the obvious ones: December evenings, the days of a major sporting or state occasion, and any Saturday in the wedding season. For those, book when the date is set rather than when the week finally arrives.
